French Onion Soup

  • You will need:
  • 4 cups of sliced onions
  • 1/2 cup of butter
  • 4 cups of beef broth (cans are fine)
  • 4 slices of French bread
  • 8 slices of Swiss cheese
  • salt and pepper
  • Optional: grated Parmesan cheese, sherry, thyme
Melt butter in a pot, add onions, keep on medium heat and keep stirring till tender and translucent. Add beef broth and seasonings and simmer for 30 minutes. Now there is a difference. If you have an oven and heat-resistant onion soup bowls - preheat your oven and pour the soup into the bowls. If you are using microwave - pour the soup into mugs. Place a slice of bread into each bowl/mug, letting it float on top of it, and cover it with two slices of Swiss cheese. Sprinkle a little of Parmesan cheese on top too, if you have it. Place your bowls/mugs into oven/microwave for a couple of minutes, so that the cheese melts. You can make more of the soup and store it in the fridge for tomorrow, just don\'t put bread and cheese in it till you\'re ready to eat it
